So I have several WFs that will run and I log the steps to the datastore…. Once they are all done, I extract them from the datastore, create a CSV and email to myself

It’s really depends on the rate that you calls to datastore, in this case, I think you have lots of events so your workflows calls to datastore too much. As datastore is still in Preview phrase, I think it could not serve your usecase right now, you can try other alternatives such as an external database like MongoDB, Airtable, etc…
